Ingredients
- 1 cup lentils
- 1 onion
- ½ large carrot
- 1 tomato
- 2 tablespoons olive oil
- 3 cloves garlic, crushed
- 1 cup beef stock (or water)
- 1 tablespoon cumin
- ½ leek
- 1 tablespoon salt
- 1 teaspoon black pepper
- ½ tablespoon coriander, for garnish
Preparation
- Boil the lentils first in a large pot with the beef stock to soften them and get a better taste.
- Meanwhile, dice the onion, tomato and carrot and sauté them in a pan with the garlic and olive oil. Then stir until the vegetables are golden and the onion is transparent.
- Then add this to the lentils, along with the cumin, salt and pepper. If desired, you can use other types of herbs.
- Then let it simmer for at least 40 minutes. Then cover it with a lid to speed up the process.
- After 40 minutes, remove the pan from the heat and let it cool.
- Finally, put everything in the blender, first draining part of the stock. Mix everything until you reach a creamy consistency.
- If the soup is very thick, add more stock. You can also save the unused stock for other recipes.
