Indeed, there are many ways to make an excellent lasagna, and not just with the traditional bolognese sauce. It is a really versatile dish and in that sense it is easy to prepare a vegan lasagna, using only vegetables, vegan cheese, vegan béchamel and vegetable butter.

1. Vegetable lasagna with vegan bechamel

Ingredients for the lasagna

  • Grated vegan cheese

For the filling

  • 300 grams mushrooms
  • 1 eggplant
  • 2 onions
  • 1 zucchini
  • 2 cloves of garlic
  • 1 small red bell pepper – medium
  • Olive oil
  • Pepper
  • Salty

For the vegan bechamel sauce

  • 1 liter unsweetened plant-based milk (4 cups)
  • 5 tablespoons of flour
  • 1 tablespoon vegetable butter
  • Nutmeg
  • Salty

 

Preparation of the bechamel sauce

  • First add all ingredients to a pan. If you like, you can sift the flour first to make sure there are fewer lumps.
  • Then bring it to a boil, stirring constantly to ensure that the mixture is thick, homogeneous and without lumps.
  • Finally, remove from the heat and set it aside.

  • First wash and peel all vegetables and cut them into small pieces.
  • Then pour a little olive oil into a frying pan and fry all the vegetables with salt and pepper to taste. Fry everything until golden brown.

Lasagna

  • Depending on the lasagna sheets you have purchased, you will need to prepare them according to the package instructions. Some of them need to be boiled, others soaked, and still others can be placed directly in the oven. Read the instructions on the package and prepare them.
  • In the meantime, you can preheat the oven to 180°C.
  • When the sheets are ready, place a layer of lasagne sheets on a baking sheet and a layer of filling on top.
  • Then repeat step 3, adding a layer of lasagna sheets and then the filling.
  • Continue until you run out of blades.
  • Then pour the bechamel sauce over the last layer and then add vegan cheese.
  • Finally, place the baking sheet in the oven for about 15 minutes, until golden brown.

Ingredients for the lasagna

  • Grated vegan cheese

For the filling

  • 340 grams mushrooms
  • 1 can crushed tomatoes
  • 225 grams spinach
  • 1 red bell pepper
  • Olive oil
  • 1 eggplant
  • 2 cloves of garlic
  • 1 zucchini
  • 1 onion
  • Salt and pepper to taste

Preparation

  • First wash and peel the garlic, onion and bell pepper.
  • Then chop them finely and put them in the pan with olive oil. Fry slightly and then add the can of tomato and a pinch of salt. You can also add a pinch of sugar if you like. You will need this to make the sauce. Then set it aside.
  • Then wash the eggplant and zucchini. You don’t have to peel them, but you do need to cut them into very thin slices.
  • Then rinse the spinach. If frozen, thaw it and drain well to get rid of all the water.
  • In another frying pan, sauté the courgette, aubergine and spinach with olive oil and salt to taste . Set aside for later.
  • Then, as in the previous recipe, you need to prepare the lasagna sheets according to the instructions on the package. When they’re done, place a layer of the sheets in an ovenproof dish.
  • Then add some of the spinach mixture on this layer and cover with a second layer of lasagne sheets.
  • Repeat to get at least 3 layers of lasagna and 3 layers of vegetable filling (zucchini, aubergine and spinach).
  • Then pour the tomato sauce on the last layer of sheets and add vegan cheese.
  • Finally, put the lasagna in the oven at 180°C for about 15 minutes, until golden brown.
  • Serve it warm and then enjoy!
