Grandma’s Delicious Recipe For A Tasty Chicken Stew

The  traditional cuisine has several delicious recipes. They have been passed down from generation to generation, along with all the changes and improvements that have been added over the years. In this article you can learn how to make one of Grandma’s chicken stew recipes yourself.

Stew with chicken in grandma’s sauce

Ingredients

  • 1 whole chicken cut into pieces (about 2.5 kg)
  • 1 bay leaf
  • salt (to taste)
  • 1 garlic clove
  • 1 drop of olive oil
  • black pepper (to taste)
  • 1 cup white wine (250 ml)
  • 1 cube of chicken stock (1 gram)

Guidelines

  1. It is important that you clean and cut the chicken into pieces first. If you don’t want to use whole chicken, you can also just make this recipe with chicken legs. The buttocks are one of the juiciest parts of the chicken.
  2. Once you’ve cleaned and cut the chicken into pieces, put a little olive oil in a pan and heat it up. When hot, add the whole garlic clove and bay leaf. Then let it cook for one to two minutes. Then add the chicken pieces. Season with salt and pepper. Let everything cook until the chicken is brown on all sides.
  3. This is a handy trick to prevent the garlic from burning as it releases all its flavour. Place them in the pan with their skins on and make a few deep cuts in the garlic.
  4. Once the chicken is brown, mix the glass of wine with a little water. Then add everything to the pan. To properly prepare the chicken stew, the liquid should cover the chicken by half.
  5. Then crumble the stock cube and sprinkle it over the mixture. Stir a little and then continue to cook on low heat. Cover the pan until the sauce has reduced and thickened.
  6. In the end, the stewed chicken is ready without having to use any complicated ingredients. You can serve this chicken stew in a bowl with roasted potatoes or white rice as a side dish.

A stew with chicken and vegetables

This is a variation of the previous recipe. The following recipe is yet another way to prepare a chicken stew. This dish still has a very traditional style but we also add some vegetables here.

Ingredients

  • 1 whole chicken (about 2 kg)
  • 1 onion
  • 2 garlic cloves
  • 1 red bell pepper
  • 1 cup tomato paste (250 ml)
  • 2 bay leaves
  • 1 green pepper
  • 1 teaspoon finely chopped parsley (3 g)
  • 1/2 cup white wine (125 ml)
  • 1 cube of chicken stock
  • 4 cups of water (1 liter)
  • extra virgin olive oil (to taste)
  • salt and black pepper (to taste)

Guidelines

  1. First cut the chicken into pieces and save the chicken breasts and legs.
  2. At the same time, prepare the chicken stock with the water and the stock cube.
  3. Once the stock is ready, cook the chicken in the stock over low heat for about an hour.
  4. Then salt the chicken and put it in a pan with some olive oil. Sear it on all four sides without letting it cook inside.
  5. Once the chicken has some color, remove it from the pan and lower the heat. In the same oil, add the onion, pepper and garlic. Then bake it all for 5 minutes.
  6. Then add the tomato paste and bay leaves. Stir all ingredients well. Then let it cook for another 10 minutes.
  7. When the tomato has reduced to about half, add the white wine. Then let the liquid boil again.
  8. Once this mixture is ready, add the chicken pieces. Make sure they are completely submerged in the sauce. Then let it cook for another 40 minutes over medium heat until the chicken is tender.
  9. When the chicken is tender, this second variation of the traditional chicken stew is ready! You can serve this dish with vegetables and decorate with a little chopped parsley sprinkled over the dish.
