2 English desserts you must try
1. Summer Terrine
This dessert is very simple and will seduce anyone who sees it, thanks to the red fruits soaked in syrup. This delicious, good-looking dish is one of the must-see classic English desserts.
You can choose any kind of red fruit you like. The choice will probably depend on the season. However, you can also freeze fresh fruit to take advantage of it all year round.
With these fruits you fill this delicious terrine that opens like a surprise gift and shows you the beautiful mix of dark and light red fruits. This combination will really make your guests’ mouth water.
Ingredients
- 900 g red fruits of your choice: strawberries, blueberries, raspberries, cranberries
- 3/4 cup white sugar (150 g)
- 7 slices of white bread (preferably stale bread)
- 1 teaspoon vanilla extract (4 ml)
- 3 tablespoons of water (30 ml)
Preparation
- First wash the red fruits and let them dry.
- Then put 3 tablespoons of water with the sugar in a large frying pan and heat until the sugar has dissolved.
- Let it boil for 1 minute and then add the vanilla and fruit.
- Heat everything over low heat for 3 minutes and gently mix it together. You will see the fruits soften as they release their juice.
- Let it cool, then drain the fruit and place the liquid in a bowl.
- Meanwhile, prepare the pudding mold and grease it.
- Then cut the crust from the bread slices and moisten them in the juice and put them in the mould, pressing them down well so that you do not leave any empty spaces.
- Then add the soft fruit and cover with the rest of the bread. Keep the remaining juice in a separate bowl.
- Then put the lid on the pudding mold and let it sit in the fridge overnight.
- You can heat the leftover juice for another 10 minutes to boil it and make a delicious syrup.
- The pudding is ready to serve the next day. When serving, pour the syrup over the dessert and, if desired, add a scoop of ice cream or some milk.
2. Custard
Custard is known as one of the quintessentially English desserts. It is creamy and a bit like pie filling. It is light and slightly sweet and can be eaten on its own as a dessert or used to fill or accompany other desserts such as pies, cakes, and so on.
We invite you to try this recipe and let yourself be seduced by its softness and delicate vanilla flavour. You don’t need many ingredients and with some advice and cooking tips the result is perfect.
Ingredients
- 675 ml milk (2 1/2 cups)
- 4 egg yolks
- 50 g white sugar (1/4 cup)
- 1 tablespoon vanilla extract (10 ml)
- 30 g cornstarch (2 tablespoons)
Preparation
- To start, heat the milk and vanilla over low heat until it starts to boil.
- Meanwhile, in a separate bowl, whisk together the egg yolks, sugar, and cornstarch until you get a light-colored, smooth cream.
- Add a little milk to this mix and then stir again.
- Then add this mixture to the pan and mix well with the milk until it thickens like a custard.
- Pour the mixture through a cloth strainer or cheesecloth and keep it in a bowl or dish to cool.
- Then cover the custard with cling film. The plastic wrap should almost touch the custard to prevent a hard layer from forming on top.
- Now your custard is ready to eat on its own or with other desserts!
